I’ve had gluten-free cakes that taste flavorless, or feel like sawdust in my mouth. . . . I’ve also lapsed into a big bite of a traditional homemade cake that tasted great but left me regretting it later. When my mother began making gluten-free cakes a few years ago, I realized there was no need to sacrifice taste just because she had to substitute ingredients. I also realized I didn’t want to have to wait until a visit home to get such treats! I created Goldilocks Goodies to serve as the perfect offering of delicious, convenient baked goods.
And I’m taking it one step farther than just gluten-free. I try to be aware of other health and allergy concerns as well as my responsibility as a global citizen, neighbor and grand-daughter.
I use agave nectar, maple syrup, and brown sugar instead of refined white sugar. I use lactose-free, heart-friendly almond milk instead of cow’s milk. Only premium all-natural ingredients with no added preservatives.
I use ingredients from farmers I know as much as possible. This means the Amish farmer up the road that has a beautiful flock of cage-free chickens to a local dairy-farm coop. I highlight seasonal produce in my treats wherever possible.
I use cellulose-based clear bags that are 100% biodegradable and compostable and paper packaging that is uncoated, unbleached and made from SFI (Sustainable Forestry Initiative) lumber fiber.
Goldilocks Goodies is a one-woman operation, but not possible without the services and products of other professionals. In keeping with a “think local first” attitude, I use insurance providers, printers and designers near my two locations – Lancaster, PA and Washington, DC.
I have been lucky enough to come from a line of talented farm-grown women who are my inspiration in providing home-made treats at a commercial level. Their pies and cakes have been there at every holiday, Sunday dinner, barn-raising and countless picnics. Their recipes, workmanship and stories are behind me every time I’m in the kitchen and it’s what I aspire to provide to my neighbors and customers in DC.
