FAQs

1.  Where did you get the name Goldilocks Goodies?

Like the little girl in the Brothers Grimm fairy tale Goldilocks and the Three Bears, I was trying out a lot of things when I went gluten-free a few years ago.  I had no problem making savory, Asian-inspired meals that were naturally gluten-free.  I even found delicious gluten-free pizza crust and baguettes.  As a young urban professional, I did not always have the time to bake, and my real dissatisfaction came from store-bought sweets that all promised they were delicious.  .  Some were OK, some were awful, some were too dry, some were too sweet, some were too processed; none were that homemade fresh-out-of-the-oven kind that I grew up loving to eat.  Goldilocks Goodies was thus born, ending the search for a satisfying dessert for others with a gluten-free diet!

2.  Vegan?!?  Does that mean you use, like, tofu or something?

While there are some companies that bake with tofu and applesauce, I am not one of them.  My goal with Goldilocks Goodies was to make baked goods that not only tasted as good (if not better) than their gluten-filled counterparts, but to do so without any ingredients that you wouldn’t normally find in sweets.   I think gluten-free has a bad enough reputation as being a sorry substitute for taste and texture, and I’m not going to let that myth live on!  My line of cookies just happen to be soft, rich and chewy without egg or dairy.  It’s that simple.

3.  What does All Natural mean?

If you’re keeping up with food news like I try to, I’m sure you know how scary an “all natural” food label can be.  After all, anything that is found in nature is considered natural – including wood pulp, animal and bug parts, and I’m gonna stop there.   My loose definition of natural is: if I could find it in my grandmother’s kitchen, there’s a pretty good chance that it’s something I want to bake with, too.  The same can be said for the reverse.  All real, identifiable foods that you and/or your kid could read off the label and tell what it is.  Nothing artificial.

4.  Hey!  My ______ is gluten-free.  Can you make him/her a birthday cake?

My passion for baking was started because of my love of eating.  Now that I’m baking for other people to eat, my passion and joy comes from the appreciation of my fans, and you don’t get a much more appreciative fan than a crowd enjoying a super decadent birthday cake (and not even realizing it’s gluten-free).  Just send me an email emily@goldilocksgoodies.com and we’ll set up a time to talk about what you want.

This comes with a few caveats:
1) I don’t do fondant or any sculpting of any kind.  It will be cupcakes or a sheet cake.  But, it will be hand-made from scratch and delicious.
2) My rule about doing the “all natural” thing means I don’t use food coloring.  Icing will be brown (chocolate), white (plain or naturally flavored), or caramel.  Oh, or pink (using strawberry preserves).
3) It will have to be flexible around my schedule since I am the only employee of my company.  That means giving me plenty of notice so that I can get it to you on time and being close to me in Lancaster or the DC area.

5.  I’m a sworn gluten-eating carnivore.  Can I still eat your food?

Yes.  Sworn carnivores, picky teenagers and women who don’t like peanut butter that are all gluten-eaters have professed to eating my cookies.  And then eating some more.  You can check out posts on this site or my facebook page if you don’t believe me.  Honestly, your bigger problem will be trying to keep them all to your self/leaving some left over for your gluten-free friend/roommate/spouse/house guest to enjoy.

6.  I’m severely sensitive to gluten.  Can I still eat your food?

While Goldilocks Goodies was created for other gluten-freers, I’m sorry to say that limited commercial kitchen space and the cost of certification has so far limited me to NOT baking in a dedicated gluten-free kitchen.  I disinfect my baking area, use tray liners and measuring equipment that doesn’t touch wheat, and stir everything by hand (not shared with gluten mixing stands).  If you’re at all hesitant due to a known history of sensitivity, then please take care of yourself first.  I will keep baking until I can afford certification!

7.  Why Himalayan salt?

Himalayan salt is believed to be the purest in the world.  Hand-mined and covered by layers of volcanic ash, it is believed to be free of modern-day pollutants as well as providing exceptional health benefits by its alkaline properties.  The pink coloring comes from the multitude of natural minerals that are in it including calcium, magnesium, potassium, copper and iron.  I’m also proud to use HimalaSalt, the only ethically sourced salt made from 100% renewable wind and solar energy and sustainably packaged.

8.  My friends would love your stuff!  But they don’t live in Lancaster or the DC area.  Can I send them some treats?

Yes!  Please send me an email emily@goldilocksgoodies.com with how many cookies or a dollar limit.  Or send them a basket of goodies with fresh-baked treats.  If you want something special, I can send you an email invoice through Paypal with detailed description and quantities and will ship them in a tin the week following payment.  Simple!  I can add a little message from you too, to make it that much more special.  You might want to double check if they are in the ever-expanding radius of grocery delivery with Relay Foods (to avoid shipping costs!).

Comfort Food weather is here!

Phew! The team here at Goldilocks Goodies (my self, my trusted delivery car Lucille, and my 1950s Hotpoint oven, my1960s sunbeam mixer) all needed a rest after the busy holiday season.

Thank you for ordering pies to share at your family table, trying delicious gluten-free baklava from my partnership with Baklava Couture, coming to see me at the Union Market pop-up, and continuing to be loyal supporters of my treats.

This month, Goldilocks Goodies bread continues to grow: available on breakfast sandwiches at La Mano Coffee Bar, gourmet grilled cheese at GCDC, eclectic sandwiches at Open City, at the deli counter at University of MD’s Food Collective, and a perfectly smoked salmon BLT at Neopol Smokery.

More news with retail options to make your own gourmet toasts at home – for now you can order through Washington’s Green Grocer.

Either way, please stay warm and enjoy a toasty grilled sandwich on delicious, buttery gluten-free bread!
